Each year, we are blessed with opportunities to work directly with San Diego growers & wine-makers to procure local grapes. In less than 3 hours from harvest, our grapes are processed and introduced to a meticulously constructed blend of young & old mixed-fermentation ales from our oak-aging program. A short maceration (20 - 30 days) allows refermentation and color-extraction to occur, producing a blurring vision of where beer and wine co-exist.
In the 2019 vintage, we were able to bring in whole-cluster Syrah (Campo Creek), Malbec (Emerald Creek), and Cabernet Sauvignon (from both vineyards). A large blend was designed to macerate all 5 varieties, thus creating a perspective of singular expression and shared influence.
