Oak Aged Rustic Danish Saison aged on fresh Opal Plums
A basic saison grist bill was fermented and aged for 25 months in an Italian red wine foeder with our house blend of saison yeast and native yeast and bacteria. After maturation in oak was complete, it was macerated on freshly harvested Opal plums grown in Slangerup Denmark, a few KM outside of Copenhagen. Opal was naturally conditioned in green bottles for 8 months prior to release. Blend 1.
