Rustic Saison-style Ale Aged in Cherry Wine Barrels
One of the most elegant beers to come from our mixed-culture program here in Mikkeller San Diego, 'Nothing Less' is the embodiment of our inspirations, dreams, and goals as shepherds of fermentation and oak maturation. We are blessed to have the opportunity to use both the cherries and the barrels from the coveted Frederiksdal Kirsebærvin in Denmark's Lolland. Early in 2019, we filled cherry wine barrels with our young fouder-fermented Saison and allowed it to mature to complete dryness over the summer before bottling and kegging. Befuddling nuance of farmhouse implication, notions of old wooden beams, fallen crab apples, and distant cherry pie come together upon a mild acidity and deep dryness. Aged hops and dynamic fermentation present a hybridization of old and new, from behind nothing to hide. This is a true exploration of nothing more, and nothing less than the fundamentals.
