Amphora Fermented Danish Wild Ale Aged on Chardonnay Pomace.
In January 2018 we brewed a simple Danish Wild Ale base consisting of Danish barley, wheat and oats and fermented it in our terra cotta amphora. After maturing in the amphora for 8 months, it rested upon lightly pressed Chardonnay grapes from a prominent wine producing region in France before being transferred back to the amphora for a second maturation period.
After Champhora developed the minerality and earthiness found in many natural wines, it was packaged in clear 75 cL bottles in August 2019.
