Beer Wine Hybrid-7.95% ABV-Golden and Red Sour Blend

 

Along with our strong affinity for enjoying great wines, we also enjoy integrating wine-making techniques into our sour/wild ale projects. A popular technique for generating complexity and deeper color extraction in certain grapes is carbonic maceration - for us brewers, it presents as an exciting avenue for experimentation. 

Sangiovese, famous for its bold, brash structure and deep earth and fruit characters, was particularly exciting to work with. We brought in some beautiful clusters and sealed them under inert gas for a 2-week long carbonic maceration, fostering rich color and some sublime free-run juice. After the fortnight, we crushed and destemmed the fruit before introducing a blend of Flanders-style Red Ale and Golden Sour Ale. Maceration lasted for approximately 40 days before we transferred the beer back to neutral oak barrels for aging.     

The portion of Chardonnay used for this blend was also sent to a small carbonic maceration experiment prior to cooling and pressing. It is not typical to see white grapes follow this production method, but we are brewers and don’t always follow convention. This yield was split between two oak barrels of mixed-fermentation Saison before undergoing refermentation. 

After 6 months of resting in barrels, we pulled together our favorite barrels of these two threads to create a finished project inspired by funky, sparkling Rose wine. A delicate rosy hued beverage is topped with a sparkling white foam and tight carbonation. Vibrant and fruity, memories of spring bloom jump from the glass, with notes of green strawberry and lilacs wafting amongst raspberry and mint. Zippy and crushable!
